豆腐 dòufu noun bean curd, tofu 冻豆腐 frozen bean curd 豆腐Chinese bean curd has a history of 2,000 years. It is usually made from soya beans. The beans are first soaked in water, then mashed, and the bean residue strained away. The bean water is then boiled, and bittern (salt residue) or gypsum is added. After the mixture has set, the water is strained off, leaving the bean curd. Bean curd made with bittern is known as ‘northern bean curd’, and is relatively solid. Bean curd made with gypsum is called ‘southern bean curd’, and is white and soft. Soya milk made with gypsum, and not completely set, is known as ‘jellied bean curd’(豆腐脑). Bean curd may be cut into squares and fermented or preserved.
