腐乳 fǔrǔ noun fermented bean curd 腐乳Also called doufuru (豆腐乳) and jiangdoufu (酱豆腐). Used as a condiment, this is a traditional fermented and protein-rich food. Small cubes of bean curd are left to ferment for five to six days and soy sauce, salt, red colouring, cooking-wine, prickly ash, liquorice and fennel are added. (→ 豆腐) |
